Millstone is a borough in Somerset County, New Jersey, incorporated in 1894, with 448 residents at the 2020 census. Millstone Historic District and John Van Doren House are here. Originally the village of Somerset Courthouse, it was the Somerset County seat from 1738 until the British burned it to the ground in 1779. Washington used the Van Doren house as headquarters after the Battle of Princeton in January 1777. It borders Franklin Township, Hillsborough Township.
